Sorry for the lack of actual posts on here – I’ve been distracted by the bright shiny lights of Instagram & Facebook. I’ve had accounts on the platforms for quite some time but have been absorbed into the super fast mini blogging it offers across the sites.

It’s been really great as I’ve discovered so much from the community of #coeliac and #glutenfree people rceently – there’s some big hitters putting out great content, recipes & recommendations. If you are on social head over to my pages and catch up with all thats been going on.

Anyho I shan’t ramble tonight but will endeavour to get some more posts/recipes on here asap.

A Gluten Free Holiday 🌴

I knew the challenge of a holiday (vacation) would present itself sooner rather than later and last week I found myself off to crazy Las Vegas, USA to celebrate my nephews 21st birthday.

Filled with huge holiday (child free) excitement but then sudden dread – would I be able to eat??? So I packed my little case with lots of gluten free snacks just incase and headed off to the home of the supersized portion

First up on the plane – we prebooked via British Airways a special request meal GLUTEN FREE – we then followed this up with a phonecall to say I had other allergies to fish and seafood. Cabin host arrives “I have a gluten intolerant meal”. The moment of truth … <breathes> it’s cod with potatoes, a side crab salad and a GF roll. The second meal came and there was a normal bread roll on the plate with a meal missing the sticker and a GF brownie – I made do with the brownie as I didn’t want to risk anything else.

We were staying at the Cosmpolitan of Las Vegas which most of the facebook groups (Coeliacs Abroad) (Coeliacs eat out too) all were complimentary. We headed to the famed food court Block 16 to explore and see if I could find something to eat…

UNADJUSTEDNONRAW_mini_4a65Block 16 is a “street food” style scene with lots of little pop ups – a little research and the glory of facebook directed me to Hatty B’s. Famed for it’s fried chicken would this be suitable? I headed to the counter where 2 extremely friendly ladies (at 12 am this was so welcome) greeted us – I asked about what was Gluten Free – they were new to this food stand so found a manager who talked me through the menu.

UNADJUSTEDNONRAW_mini_49a8 I ordered some Crinkle cut fries for quickness and as they were cooking the chef came over to say they use a seperate fryer so I could rest easy. Well they were a taste sensation after the 12 hour journey 🙂 The next day as I past by – one of the team recognised me and pointed out they had updated their board with GF markers … 

We headed out to the famed EggSlut for breakfast and wow this was soo good. They are so CC aware they have separate cooking units/utensils when an allergy order comes in. Most dishes can be adapted – I went for a Cheeseburger. It had been a while since I managed a good one complete WITH a bun so I ordered and was not disappointed…. The bun managed to hold it’s own complete with patty – perfect eggs and GF pickles!

I had a disastrous third day when we ventured out to look at the other hotels – I struggled to find anything suitable so ended up in a 711 and grabbed snacks. We went to the Rock Bar at Planet Hollywood and a wonderful server Jerry who was very GF aware suggested a Brisket Salad as the most friendly CC option.

Day 4 was an amazing food day we returned to the Cosmopolitan and the wonder of Henry’s (located down on the casino floor). I opted for the Henry breakfast complete with Sausage and poached eggs. It was divine and totally normal food which was great when I wanted to fit in with our large party of 10 people. The service was soo great here we returned the next day and I got the Californian Omelette equally as good and comforting.

We followed this up with a late lunch at P.F Chang’s – now you’ll know if you have read my blog before about how much I miss Chinese Food. I’ve still not managed to find a great gluten free and coeliac safe restaurant local to me so this was on my top to do things in vegas. We entered a little apprehensive and it was one of those moments for me that I worried I had built it up in my head so much that I may be disappointed … We were greeted and seated provided with the allergy menu. The server was knowledgable and confident I would enjoy it. We took her advice and ordered Chicken Lettuce wraps to get our culinary adventure under way followed by Mongolian Beef (one of the signature dishes) and Fried Rice. I was super excited and waited with anticipation – the smell, atmosphere of the whole restaurant was completely exhilarating and got the taste buds ready.

First dish up and it was so good that my husband almost devoured it – thank god his muggle dumplings arrived! The dish was comprised of Wok fried chicken, mushrooms, spring onions, water chestnuts and crispy rice noodles with an intense flavour served with lettuce to create little parcels were THE best start I could have hoped for. Not too keen on the chilli sauce that accompanied as the flavour sensation didn’t need any alterations. Then the main dish arrived. I guess the closest thing I could put this too is a combination of a black bean dish with the depth of a satay dish. It was a triumph – our server came back to check in and said she was happy to see my smiles. I couldn’t eat both massive portions so she kindly boxed up my leftovers and sent me on my blissful way.

Our adventures were over so we headed back onto another British Airways flight where my two meals redeemed themselves – firstly a steamed chicken with veg & rice and a beautiful omelette breakfast. Glorious end to a wonderful adventure … I think my best advice is to take your snacks on the plane, our cabin steward let us know on the return leg if you provide a letter from your doctor you are entitled to additional baggage allowance and RESEARCH. Have some preplanned options and DON’T forget to check that it’s coealic friendly as not every food outlet was aware of the cross contamination issues.

Sorry for the radio silence

What a crazy 6 months its been – I’m sorry for the radio silence but it will all change from now on. So I’ve been blighted by some health issues not with my Coeliac but it turns out I have a bit of a dodgy ticker – so I’ve been overwhelmed with exhaustion and banking some much needed sleep…

However the past is the past and I got to keep moving forward … I’ve updated my blog name and instagram so make sure to give me a follow

Always in the mood for Chinese food 🍜

My go to take away food (Before CD) was always Chinese Food – it makes me happy, it’s comforting and perfect for a social eat up with family or friends… so imagine the horror when you meet with your dietician and she shakes her head saying “um not the best #glutenfree food”.

So off to our local which took us about 12 months to find – never failing us with a decent meal and the owner says “what is gluten? I don’t think we use it?”. So we left empty handed – but gastrointestinally undamaged.  What was I gonna do? Thank God for google – we searched and searched for the easiest recipes with ingredients we had at home and started a quest to create an equally delicious FAKEaway.

I stumbled upon a really easy recipe for a family staple of Chicken Fried Rice on All Recipes which was pretty perfect. We substituted the Soy Sauce for a Gluten Free Soy Sauce – I love Clearspring Tamari Soy Sauce (Gluten Free). It has a delicious flavour and very little is needed.

All in all the recipe (if you precook your chicken and rice) took me a quick 15 minutes from cooker to table and was delicious… The second trial we created our own Salt & Pepper Chips ( a family staple).

Middle Aged Soup Maker

whatsapp image 2019-01-04 at 23.53.33So not so long ago I turned 35 and to my delight (I’m rock & roll I know) I got a Morphy Richards Soup Maker! Now I’ve never been much of a soup lover unless it’s Heinz Tomato Soup and I’m feeling in need of a little comfort; however after a really great first meeting with my Dietician she advised it as a really great way of upping my veg intake and clean eating solution.

My Soup Maker is super easy to use – you simply select your soup you want to make, bung the ingredients in, decide on the consistency and press start and 30 mins or so later you’ll have a ready to eat delicious soup.

For my first foray into the world of soup I’ve been recommended increasing my iron levels so I decided on trying to recreate an old lunchtime favourite I found at Costa last summer when I first got diagnosed; Chicken, Lentil & Spinach. Now google spewed out so many varieties of this soup recipe and thanks to lack of ingredients & a bit of trial and error I created a beautiful, hearty soup that Sarah (my dietician) would be proud of.

Ingredients

200g Green Lentils (Drained)

2 Carrots – peeled & finely chopped

2 Celery Stalks – Finely chopped

1 Onion – Finely Chopped

1 Potato – cubed

1 tsp frozen crushed garlic

220g Fresh Spinach

1 tsp paprika powder

1 Gluten Free Chicken Stock Pot

2 skinless chicken breasts (shredded)

Water to fill level

Salt & Pepper to taste

I made my soup chunky and it was delicious – however my husband prefers his soup smooth so you can blend for 1 min after.

This soup is perfect for winter – add lemon juice for a fresh spring/summer taste. My soup maker made 3 good sized portions so it’s ideal to batch cook and freeze for later – I served with Marks & Spencer’s Gluten Free Seeded Buns.

One cannot live well, love well or think well if one has not dined well ♥

f00f43bb-fe67-4f8d-804c-0bb511416a40One of my favourite past times is going out to eat a gorgeous meal with great company and indulging myself with the novelty of no dishes…

Now with the recent dietary changes I was aghast – would I be able to find anywhere that understood my requirements without them thinking I was some trendy diet fadder? Was it possible to go and find something other than salads on the menu?

So I bravely headed out – desperate to enjoy a casual lunch with my husband. We got seated and I explained politely I needed #glutenfree food and the server brought the biggest Lever Arch folder over and plopped it on the table taking my menu away as she went. After perusing for a good 15 minutes I thought lets be safe and get a greek salad … The salad arrived and I tried my best smile whilst my DD (dear darling) enjoyed his giant burger & chips. Food envy – anyone else? About 30 minutes later – there was that intense sharp pain across my abdomen and an urgency to get home … My Salad reappeared much to my surprise – I went online and googled the possible causes which all pointed to Cross Contamination. What is this contamination? CC is the process by which bacteria or other microorganisms are unintentionally transferred from one substance or object to another, with harmful effect. So a little bit of digging into the kitchen and it appears my GF Salad had been prepared in the same space the nonGF salads (with croutons – same utensils used) were made. Who knew how sick I could be from a tiny crumb? A week later and the cramps & bloating stopped…. Lesson learnt.

Top Tip #1 – when eating out ensure your tell your server that you have #coeliac disease – advise them of what you can/cant eat.

One disastrous experience can’t quell the love of food so we headed for a much loved local restaurant – D’Acqua. My lovely man researched ahead and spoke with them & much to my delight they had a full GF menu. We sat down and I expected the folder of doom but was handed a large menu with selections marked & ensured that all measures would be taken to assist me to have a fab meal. So many options for starter, main and the all important dessert that my heart still thuds thinking about it. We spoke with Jimmy & Hannah the owners and couldn’t express how much it meant to be able to enjoy great food without the worry. If you’re in #sunderland it’s a must destination for muggles or Coeliacs delicious 10/10.

Tip#2 It take some of the enjoyment away but using tools like http://www.findmeglutenfree.com and coeliac.org.uk you can find a list of safe places to eat with recommendations ensuring you don’t go hungry.

Another successful research brought us to The Clean Bean in Seaham near Sunderland. A newish bistro with a completely #glutenfree kitchen serving beautiful breakfasts, lunch and dinner with the sweetest service. They offer a take out service too and are coeliac uk accredited.

So what’s my story? Why a blog? Why now ?

I’m Vicki – I’m 35 – recently diagnosed with Coeliac so I thought what can help me explore this new territory? Sharing my experience via Social Media & now this blog.

So how have I survived 34.5 years and only just found out I’m gluten free? I had a wonderful little girl in 2017 but started to suffer chronic stomach pains – believing this to be post surgery issues I left it until I could take it no more. A very thorough locum GP who initiated blood tests and a referral to my local hospital and it turns out I had developed Coeliac Disease.

What is Coeliac Disease? Coeliac is a disease in which the small intestine is hypersensitive to gluten, leading to difficulty in digesting food. Caused by an adverse reaction to gluten, a dietary protein found in three types of cereal: wheat, barley and rye.

So what does this mean for me? It means long gone are the beautiful pastas, cakes and dreamy dishes BUT ultimately a happy, healthier me and someone who now writes a blog…

So just hang in there with me whilst we explore this #glutenfree thing.
